We always buy all 3.
Right now I'm eating blocked sharp cheddar. I cut into slices and them. YUM I love sharp cheddar cheese.

I get the blocks. I have a knife and a shredder. I don't eat much bread so I don't need slices. Mostly have cheese cubes with wine or shredded on an omelet.

I rotate between all three. I prefer the slices for things like burgers and the shredded for salads. Blocks are probably what I buy the least of, even though I do buy those as well.

For home I keep the blocks. For work it's singles (mini-squares or Babybels). I rarely buy shredded.

I like shredded the best but the blocks and slices are usually better to decorate food with.
