love it stuffed with ground beef and rice. Im not fond of cheese so i avoid cheesey ones

I love them but they have to be vegetarian. It is one of the foods that some ppl fix when I am attending a dinner at their house.
I had one last night. I make my own in the microwave and stuff it with grits, veggie sausage and sauteed onion. If you get the consistency right the grits are solid with the fony meat and onion flavor. Really good.

We have done the ground beef, vegetarian no meat meat, and even ground turkey varieties. It has been awhile, especually with peppers going for close to $1.00 each here.

Grits, is ground dried hominy, which is corn that the outer crust has been removed with lye.
Very big in the south - looks like cream of wheat but they don't eat it in a bowl with sugar and stuff, usually with fried eggs and get the yolk mixed in it.
I make it a little firmer for the stuffed pepper, as the onions and pepper have moisture. The flavors all blend really well after 'baking' in a covered dish in the microwave.
