I love them, I cut off the sharp leaves , cook them either in boiling water or steam them about 20 minutes then serve them with a white sauce made with lots of real butter, or with melted butter. They are delicious, unfortunately here in Canada we rarely get them because they are so expensive. Used to buy them 4 for a buck in California. The hearts are just soooo good. But so are the base of the leaves!

I do't think I've had them since the '70s. Never cooked them myself, just shared eating them with others at a gathering. They were boiled and we broke off leaves and dipped in melted butter. Kind of a snack food that was big in Cali and Hippie households of New Orleans.

Believe me my grandparents were't hippies, then artichokes weren't the delicacy they have become. We were poor folks yet we had artichokes fairly often. After I married they were still affordable in California. Apparently though the only places that they are grown is California and Israel.

The way I had them, was to boil them then break off leaves, and spread mayo on top.
