Ignoring amenities like money and attention, could you deal with groupies, loss of attention, being separated from them for long stretches of time because they're working, etc., etc.?

I would love to do it once, just for the experience. I wouldn't hold my hopes too high. Shit, with my looks, I couldn't even "get" Clint Eastwood, so doubt this will ever be a "worry" for me! LOL

Even WITH those "amenities", my answer would still be NO. I would never date anyone for "money" and I wouldn't want that kind of attention anyway. I wouldn't want to be talked about in magazines or tabloids or anything like that whenever my "famous" partner did something sleazy. That would be a life of zero privacy! Definitely not my style. I could probably go out with someone who was "known" in the public eye, or "famous" in certain circles, but not necessarily immediately recognizable to a large crowd. If it was a "star" the caliber of say Allison Mack (from Smallville) or Michael Welch (from the Twilight movies) or Michelle Kwan (the figure skater) then it wouldn't be that bad. People know who they are and might recognize their face, but they're not famous enough to where somebody is going to bother them or their date.
