Re: Ricotta Ball Soup
Ricotta ball? :O I never knew dumplings were able to be made with Ricotta. I usually just have the similar looking Matzoh ball. But yeah, anything with ricotta must be delic.

I actually made it once on my own, my sister usually makes it all the time.
You make the soup just like you would make Chicken soup only including the vegetables but minus the chicken. The ricotta balls are made from 1 small container of Ricotta with 2 cups flavored bread crumbs, grated cheese and 2 eggs. You mix it up like you were making meatballs. You have to wet your hands in order to roll the mix up into balls. Put them in the soup and let them simmer for about half hour.
My sister serves it over rice or ditalini pasta.

Is it at all similar to a matzoh ball? Or does it just look the same?Tony Marino wrote:

Never had it, and will pass. My tummy doesn't get along with Ricotta.

It looks similar to Matzoh ball but the consistency is different, very tasty.
