    The upside down omelet. Using real cheese, instead of folding it over, flip it upside down and cook until the cheese is brown and crusty. Then put tomato or chili sauce on it.

    I also use chili beans & cheese layered between corn tortillas to make a Mexican Lasagna.

    Yes a very very simple dish. In a pie tin place a couple of tbsp salsa or taco sauce, spread it around then cover it with opened seeded canned Anahiem chilies, slice tomatoes over the chilies and sprinkle grated cheddar or long horn cheese over that, add another layer top with cheese and a few dollops of salsa. Bake at 350 until cheeses are melted.
