    Scrambled....over easy....sunny side up....?

    I'm not a big eater of eggs, but on the rare occasion I have them, I like them scrambled with cheese.

    I always liked them "over medium" with the runny yolk but thanks to salmonella I pretty much just eat them scrambled these days.

    Over hard, but with just a little core of runny yolk in the middle. If they are not perfect, it is ok.

    Mostly scrambled but sometimes I like them sunnyside up with whole wheat toast so I can dip it into the yellow. I also like to put Franks hot sauce on my sunnyside ups.

    I like them:

    soft boiled
    hard boiled
    poached
    scrambled
    fried over med (yolks runny to put on my grits)
    fold-over cheese omelet

    and my own invention, the upside down omelet, where instead of folding it, you flip it over in a hot skillet, cheese side down and cook until the cheese is a crisp crust. Spread some spaghetti or chili sauce over that.

    Just about any way although soft boiled or over easy are my least foavorite. I like to get creative with omlets and I'll make a breakfast burrito out of scarambled. Roger on the hot sauce!

    I think the word is poached but I don't know, first you fry them and then when they're really hot, pour water on them and cover them with a lid until the yolks are pink, and stick toast in them.

    I like eggs just about every way they can be made.

    However....

    Scrambled eggs must be well done (I don't like snotty scrambled eggs) and fried eggs have to be no more than over-medium. I love omelettes, Huevos Rancheros, boiled, poached, scrambled-egg tacos with corn tortillas and avocado and Frank's Red Hot. Smile

    My favorite diner around here serves a spinach/feta/tomato omelette and also a brie/apple/canadian bacon omelette. Jeez, I'm getting hungry....
