I'd tell them how sorry I was for their loss but that I followed their instructions to the letter and it just must have been the fish's time. And if it happened more than a day before their return I'd tell them that the funeral service in the bathroom was lovely.

There's nothing wrong with admitting the goldfish died. I've read that they can live for several years but I've got to say, I sure never knew anybody who had any that lasted more than a couple.

Tell them the fish died. No need to cover it up.

If it was a basic enough looking goldfish that it COULD be switched with another, then I'd probably consider it if this fish was just THAT beloved by this friend. In the end though, I would still replace the fish, but would come clean about what happened.
